The Valle Maggia pepper, although pepper does not grow in the valley, was named after its creator, Virgilio Matasci, who, together with his son Elis, enriches the spice in his small family laboratory.
The original recipe was born in the 80s; in fact, during the preparation of the traditional local "mazza", Virgilio Matasci realizes that the process of putting the pepper in brine, gave it a pleasant softness. Starting from this awareness, over the years the recipe has been refined to obtain the much appreciated Pepe della Valle Maggia.
